OverviewThe Reflectoquant® Total Sugar test is the easy way to determine the reducing sugar content in your potatoes, and minimize the amount of acrylamide in your potato products. It is designed to screen potatoes on-the-spot and before they go into production, saving you costly analyses in the laboratory. With the Reflectoquant® Total Sugar Test you can monitor glucose and fructose in food and in fruit juices, and also optimize your winemaking process. D-Glucose and D-fructose are converted into D-glucose-6-phosphate. This is oxidized by NAD under the catalytic effect of glucose-6-phosphate dehydrogenase to gluconate-6-phosphate. In the presence of diaphorase the NADH formed in the process reduces a tetrazolium salt to a blue formazan that is determined reflectometrically on the RQflex®. For the determination of only glucose please refer to our MQuant® or Reflectoquant® Glucose tests.
