The Popular Reddish Oil
Palm oil is an edible oil made from the fruit of oil palms. Due to the fruit’s high beta-carotene content, the oil is naturally reddish in color. Palm oil is a traditional cooking ingredient in parts of Africa and Southeast Asia, and extensively used in the food processing industry. Because of its relatively lower production costs, it is one of the largest contributors to the global oils and fats market.
The quality of palm oil is determined by several factors. One important parameter is its deterioration of bleachability index (DOBI), which is dependent on the quality of the fruit, as well as its ripeness and storage conditions. The DOBI value indicates how easy it is to refine crude palm oil. A value of less than 1.8 implies poor quality, while values greater than 3 signify high quality. Carotene content is another key quality parameter, with greater values representing better quality.

The Global Standard
- The international standard ISO 17932:2011 was established to check these two important parameters in palm oil.
- The standard specifies a method for the determination of the DOBI of crude palm oil and the carotene content of crude or bleached palm oil and their fractions by spectrophotometric examination in the ultraviolet and visible range of the spectrum.

- Palm oil producers and processors must fulfill ISO 17932:2011 requirements in order to classify their products and market them for a corresponding price.

Procedure: A homogeneous sample is mixed with isooctane and filtered. Extinctions at 446 nm and 269 nm are determined. DOBI is calculated automatically.
