      Description
      OverviewNative Chitosanase from Streptomyces species. A member of a new class of enzymes with antifungal properties that efficiently catalyzes the hydrolysis of acetylated chitosan (0 to 60%). Does not hydrolyze chitin or carboxylmethylcellulose. Acts by splitting the β1,4-glycosidic linkages of GlcNAc-GlcN (Km = 29.3 µg/ml) and GlcNAc-GlcN. Its activity generally increases with decreasing acetylation of chitosan. Suitable for the efficient preparation of protoplasts of Mucor and other Zygomycetes, allowing the genetic manipulation of these fungi.
